My dad eats the liver of the deer, but not the heart or anything. We do scrape every ounce of meet of the ribs and such for burger and sausage though. Generally the reward for the successful hunt was the tenderloins butterflied and fried that day. Deer liver can be pretty dangerous nowadays due to cadmium leakage and such from dumping sites. MNR recommends you send them a small piece so they can test it to make sure its safe.
As for haggis , a poverty food disguised as a delicacy as there is nothing else. My personal belief is the organs keep the meat alive for me.

Yeah, if I was starving I'd batter one of those little freaks, I suppose...but I wouldn't like it. No organs for me, please. Barf...after this I may seriously do that vegetarian thing I've been threatening myself with.

Northern ontario. Problem is a recent one, NiCad batteries were finding their way into landfills, would then leak and get into ground water/streams. Cadmium is a high toxic heavy metal, moreso than lead I believe. In advent of these events it is possible the livers of the tastey critters may contain enough cadmium to severely damage you mentally. Hence why they ask to get them checked before you eat them. This is in rural areas, not urbanized places. Northern ontario is pretty sparse as far as population goes. Never heard of anyone having any trouble with their deer liver but with stuff that is fat soluable the precautions seem reasonable. Interesting bit with the heart though. Been a few years since I hunted (been 9 hours from home and its always midterm season the same time its deer season). Looking forward to getting back into that one.

I see, and I can't criticize for toxic waste problems up there, as we
have our own issues - epizootic hemorrhagic "wasting" disease (EHD)
and "blue tongue" (BT). . We have to watch the deer for signs of
disease while in the field, and fishing is getting to be a risky
proposition too because of mercury and cadmium poisoning.
